Yeshi Vegetable Pakoras

Pakoras are a traditional dish shared among loved ones to celebrate Diwali, the biggest and most important Indian holiday of the year. Diwali, also known as The Festival of Lights, is a celebration of new beginnings and the triumph of good over evil and light over darkness.

In our Yeshi twist on this classic Indian dish, we added a dash of our Roasted Garlic & Parmezan Nutritional Yeast Flakes to the recipe and a side of our Smoky Chipotle Dressing for dipping!

Used the flakes as a shake and bake on chicken and it had incredible flavour! Highly recommend. Can't wait to try it on popcorn! - Graeme, Yeshi Fan

Yeshi Vegetable Pakoras

Ingredients

  • 1 cup chickpea flour

  • 2 cloves garlic, crushed

  • ½ head cauliflower chopped

  • 2 carrots diced

  • ½ cup frozen peas

  • 2 medium onions diced

  • 1 teaspoon salt

  • ½ teaspoon ground coriander

  • ½ teaspoon ground turmeric

  • ½ teaspoon chili powder

  • ½ teaspoon garam masala

  • ½ cup of Yeshi Roasted Garlic & Parmezan Nutritional Yeast Flakes

  • ¾ cup water

  • 1 litre oil for deep frying (unless you're using an air fryer)

Directions

Step 1 To make the batter, mix chickpea flour, garlic, salt, coriander, turmeric, chili powder, ,garam masala, and Yeshi Roasted Garlic & Parmezan Nutritional Yeast Flakes. Make a well in the centre and slowly pour water into the well and mix to form a thick, smooth batter. Add more water if the batter is too thick.

Step 2 Fold in cauliflower, carrots, peas, and onions.

Step 3 Heat oil in a frying pan (or prepare air fryer). Once the oil is hot, drop spoon fulls of the batter into the frying pan. When the bottom is brown and crispy, flip them over. Remove them when both sides are cooked (or follow air fryer instructions).

Step 4 Serve warm with Yeshi Smoky Chipotle dressing!

Happy Diwali!
