Simply Fresh Tostadas
Ingredients
8 taco shells
1 can refried beans
1 bell pepper, sliced
1 red onion, sliced
½ Lg Avocado
3 Roma Tomatoes, diced
4 green onions, chopped
½ bunch cilantro
1 lime
½ cup Crispy lettuce, shredded
½ cup salsa
1 tbsp fresh oregano
1 tbsp chili powder
3 cloves garlic, chopped
½ cup shredded cheese or cheese alternative
Salt & pepper
Yeshi Smoky Chipotle Dressing
Directions
Step 1
Place ½ avocado, 2 diced tomatoes, most of the cilantro chopped fine & 2 chopped green onions in a medium mixing bowl. Add a pinch of salt. Mash to coarse consistency add juice of ½ lime and mix together.
Step 2
Heat refried beans over medium skillet. Add chili powder and lime juice.
Step 3 Spread beans on warmed tortilla shells. Top with veggies, salsa, cheese and Yeshi Smoky Chipotle dressing!
